Chilean Sea Bass and Chilean Salmon come from cold water. These are cold beaches. But, like Canadians, Chileans swim anyway.
(Incidentally, Chilean Sea Bass represents a problem for environmentally-aware consumers. Its name is actually Patagonian Toothfish, which marketing renamed "sea bass" for the US market. Besides overfishing (some predict it will be commercially extinct, like Canadian Cod, within 5 years) there is a lot of illegal fishing fishing and what they call "pirate ports" involved. Sorry, that's what too much education does for you.)
